About the herb
Sliced across the grain
Sliced across the grain rather than along it, which is how the water gets in. Lemongrass is drunk for bloating and a heavy stomach, and it is very good cold on a hot afternoon.
Citrus and faintly gingery, cleaner and grassier than lemon itself. Ice it, add mint, and it becomes a different drink entirely. Very good iced.

How to steep lemongrass
One heaped teaspoonOf cut stalk, per cup.
Water just off the boilPour 8 to 10 oz over the cut stock.
Steep 6 minutesCover the cup and let it sit.
Any time of dayCaffeine-free, so it never gets in the way.
