Cardamom came to France by trade and stayed in the spice drawer rather than the herb garden. It is the spice that suffers most from grinding. The oils are gone within weeks, where whole pods keep for years, so we buy it as it grows, seed still inside.
Sweet, resinous and faintly eucalyptus, with a cooling finish. Crush the pod between your fingers before it goes in the water.
