No plant is more thoroughly French and more thoroughly overlooked. The spring salad, the wine, the roadside verge. The flowers close by afternoon and won't open again once cut, so the picking window is a few hours around noon, for a few weeks in spring.
The gentlest part of a plant the French have always taken as a spring cleanse, and the easiest to drink of the three. Honeyed and soft, much sweeter than the root or the leaf, with a light floral finish.
