About the herb
A root eaten long before it was steeped.
Known as gobo in Japan, where it's still a common vegetable, burdock sends down a root a meter deep in a single season. It's lifted in the first autumn, before the plant flowers and the root turns woody.
Sweet and mineral, close to an artichoke heart, with a long earthy finish. Steeps to a soft amber.
