Autumn is when the root has pulled its sugars down for the winter, and roasting is what turns it from a plain bitter root into something worth drinking. We take it to a medium roast and no further.
Dark, bittersweet and faintly caramel. Drunk as a morning cup in place of coffee, and taken as the classic cleansing root.
