About the herb
It's all in the skin.
Cut in strips and dried low and slow, because everything aromatic about a lemon lives in the skin. The peel is taken for a lift in the morning and for the vitamin C it carries.
Clean and properly lemony, with a soft bitterness from the pith. Add it to anything dull and the whole pot wakes up. Lifts almost anything it's added to.
How to steep lemon peel
